Kibbe is a consultant dietitian serving several clinical contracts in Western South Dakota. Nationally she is known for her work on several Native nutrition models including the Four Winds model and the California Foodway model for Native nutrition.   Kibbe has authored several journal articles on native nutrition, and is known for promoting an eating style that is in keeping with historic food patterns. Currently she serves on the USDA National Advisory Board for Meat and Poultry Inspection. She is a member of the Oglala Sioux Tribe in Pine Ridge, South Dakota.
